the tomato-filled-with-egg recipe has been a great standby dinner and a delicious way to eat up tomatoes from liz’s father’s garden. today i am making it for lunch, but this tomato was larger so i experimented a little. i wanted to keep the calories down but still enjoy lunch without feeling hungry in a couple hours, so i only used one egg (although the tomato was large enough for two eggs). i beat the egg, added a small amount of grated parmesan cheese, a half a slice of black-forest ham chopped, three tablespoons of chopped frozen spinach (defrosted) and a generous sprinkle of poultry seasoning-i like “wild oats” brand with a “built-in-grinder.” baked in the toaster oven the same way as the first recipe, but a few minutes longer due to the large size.

i love fall weather, and it is so nice outside. later i will go for a long walk . . . around here on a sunday between 1:00 and 3:00 is the best time to go for a walk because there tend to be quite a few “open houses” around the complex, we like to snoop around and see what’s for sale, how prices are, see how fast places here sell and of course get a look at how other owners have fixed-up (or not) so we can get ideas for our own place.

liz has gone back to work on sundays for the school year. this sucks. but no reason not to make the most of a nice day alone.

    ok, so, even though it is perfect outside i stayed in. but i walked on the treadmill while watching “inside man.” two hours, 4.5 miles and 580 calories later i went out to buy cat food.
