mmmm . . . lasagna . . .

this is my favorite lasagna recipe.  it is easy, quick, healthy and yummy.  i use:

  • won-ton or egg-roll wrappers
  • reduced fat shredded italian cheeses
  • sliced mushrooms
  • frozen chopped spinach
  • sliced tomato
  • fresh basil
  • sliced yellow squash
  • sliced zucchini
  • chopped scallion, shallot or onion
  • salt-free seasoning ( i like salt-free because the cheese tends to be salty)

i use what ever veggies are available or convenient for me, i may use all that are listed, or only two.
slice veggies, steam or microwave frozen spinach.

heat oven to 380 degrees.

coat baking dish with a small amount of olive oil.

place a single layer or egg-roll wrappers in the dish, top with single layer of veggies, sprinkle cheese to cover and as much or few onion as you like, as much seasoning as you like, cover with single layer of egg-roll wrappers, repeat until you reach the top of the dish.  the layers will sink into the dish as it is cooking so it is ok to really top it off.  cover the last layer of wrappers with cheese and top with thin slices of tomato and basil to pretty it up.  prep time is about 10-20 minutes depending on how much slicing you feel like doing.

cook for 40-45 minutes.

i don’t like eggplant, but if you do be sure that you have roasted or broiled the eggplant until it is fully cooked because it will barely cook in the lasagna if you add it raw (learned this the hard way, pluh).
