
this was my third thanksgiving turkey, and the largest item to be cook in our home. it was phenominal.
i was a little concerned about dryness (this is just a breast), but it was sooooo fantastic that i can’t believe that i was worried at all! the only problem that we ran into was that we defrosted for two and a half days, but it was still frozen in the center, so i ran cool water through the cavity and it was fine in 45 minutes or so. i stuffed the cavity with quartered onion and fresh sage, thyme and rosmary. liz chopped up some herbs and we melted a stick of butter and sauted the herbs with salt and pepper then poured the butter between the meat and the skin. it was perfect.
